No-Bake Pomegranate Dessert

Ingredients (per 4 servings):

  • ½ cup crushed low-fat graham crackers or digestive biscuits — 3 pts total
  • 1 tbsp melted light butter or butter substitute — 3 pts total
  • 1½ cups nonfat Greek yogurt0 pts
  • 1 tbsp sugar-free syrup or 1 tbsp honey — 0–2 pts (use sugar-free to cut points)
  • ½ tsp vanilla extract — 0 pts
  • 1 cup pomegranate seeds — 0 pts
  • Optional: small sprinkle chopped nuts (optional) — 1 pt per serving (skip for fewer points)

Instructions:

  1. Mix crushed biscuits with melted light butter; press into jars.
  2. Whisk Greek yogurt, sugar-free syrup (or honey), and vanilla. Layer over crust.
  3. Top with pomegranate seeds and optional nuts.
  4. Chill or serve immediately.
